I'm from California and have high expectations on food quality, ingredients used, and technique. My friends had a party of 9 and we came for someone's 40th birthday. They were so easy to book and work with, and what was most surprising, was that he was able to adapt and completely prepare a vegan meal for me. And no, it wasn't just a salad and random sides. He was able to completely prepare a vegan Cajun dish for me, complete with main entrees, and a really good vegan dessert too. It was a brown butter pound cake but wasn't too decadent and just the perfect amount. I know private chefs with experience vegan cuisine is hard to come by, so please to give Chef Gason a shot if you're in the area. What a special evening - we all learned tons, not only about how to make the food (including remoulade sauce, boudin balls, crawfish étouffeé, collard greens and banana foster), but also about local traditions and ingredients. We visited New Orleans for a high school graduation trip for my daughter. My sister surprised her with Chef Gason because she wanted original Louisiana gumbo. We got that and so much more! He even made chicken fingers for the younger kids that were so delicious my nephew didn't even ask for barbecue sauce (trust me, that's a big deal)! I cannot say enough about the excellent meal prepared by Chef Gason. I’m selecting the meal there were a number of options so I was able to pull together all of my New Orleans favorites. Communication and payment was easy, even with last minute head count changes. In my group of 14 the next day we rated our favorites of the night : The first course seafood gumbo became the standard bearer for every other gumbo we ate this weekend and NOTHING compared to it. Same with the oyster Caesar salad. People wanted the sauce on the bread pudding as a stand-alone it was so good. The ribs were flavorful and fell off the bone.
